PINE NUT QUINOA

Here is a simple and tasty vegetarian recipe and vegan dish
PINE NUT QUINOA
2/3 cup chopped unroasted pine nuts
1 cup Quinoa
2/3 cup sliced green onions
1/2 cup lightly packed chopped parsley
2 tablespoons chopped mint leaves
1/2 cup raisins or dried currants
1/3 cup fresh squeezed lime or lemon juice
114 cup almond or olive oil
1/4 teaspoon pepper
Romaine or Boston lettuce leaves
Measure Quinoa into large bowl. Cook Quinoa in boiling water 20 minutes and
Add nuts and remaining ingredients except lettuce,
Toss thoroughly. Cover and chill at least 2 hours. To serve, spread lettuce leaves on a serving plate and spoon wheat mixture onto the leaves. Makes 6 servings.
